Sugar-Free Almond Spice Cookies Recipe

Fragrant with apple pie spice and vanilla, these sugar-free cookies are reminiscent of hermit cookies. Using almond meal in place of flour keeps the carbs low and makes these almond spice cookies gluten-free. The result is a slightly chewy cookie that's truly satisfying.

It's also a one-bowl recipe that comes together quickly with just a few ingredients.


  • 2 cups almond meal (you can make your own almond meal by finely grinding whole, skin-on almonds)
  • 1½ tablespoons apple pie spice (if you don't have premixed apple pie spice, use 1 teaspoon cinnamon, ½ teaspoon nutmeg and a pinch of cloves)
  • ½ teaspoon salt
  • ½ cup sugar equivalent in artificial sweetener (zero carb preferred, such as liquid sweetener)
  • 1 large egg, lightly beaten
  • ½ teaspoon vanilla
  • 1 packet artificial sweetener (to sprinkle on top)
  • Sliced almonds (optional)


  1. Preheat oven to 325°F.
  2. In a large bowl, whisk together the almond meal, spices, salt and artificial sweetener until completely combined. Add the egg and vanilla and use a mixing spoon to mix well, until mixture clumps together and forms a large ball.
  3. Use a spoon to scoop out about a tablespoon of dough, then roll between hands to shape into a ball. Continue with the rest of the dough until you have formed 2 dozen balls, each about one inch in size. Place cookies half an inch apart on greased baking sheet, or a baking sheet covered with parchment paper or a silicone mat. Use the back of a spoon or your hands to flatten the cookies to about 1/4 inch thickness. Sprinkle the tops of the cookies with granulated artificial sweetener. Top with sliced almonds, if using.
  1. Bake the cookies for 10 to 12 minutes or until cookies are slightly brown on bottom. 
  2. Transfer to a cooling rack and thoroughly cool before storing. Stored in an airtight container, these cookies will keep for several days.

Nutritional Information: Each cookie has a little over half a gram effective carbohydrate plus 1 gram fiber, 2 grams protein, and 50 calories.
