Thyroid-Friendly Recipes: Coconut Oil Salad Dressing

Many holistic health experts tout the thyroid-friendly benefits of coconut oil. If you’re interested in incorporating coconut oil into your diet, here’s a delicious recipe for a coconut oil-based salad dressing.

Ingredients:

2/3 coconut oil, melted
1/3 cup extra virgin olive oil
1/3 cup white balsamic vinegar (you can also use apple cider vinegar)
½ Tbs raw honey
1 small garlic clove, minced
½ tsp dried oregano
Sea salt and fresh ground pepper, to taste.

Blend The Dressing

Add all of the ingredients to a bowl and whisk until well blended. It may look as if you will never get it blended smoothly, but keep going. 

Pour into your favorite dressing container and let stand an hour or two before refrigerating.  You want that garlic to mellow out!

This dressing will solidify in the refrigerator -- but if you pull it out an hour ahead, or place the container in some warm water for a few minutes before you need to use it  – you’ll be fine!  Lightly shake the dressing before pouring onto your salad.
