This beef stew Burgundy is a great meal that is low in fat and you simply set it and forget it in the crockpot. I know various wine experts say to cook with the quality of wine you want to drink but I normally use cheap burgundy wine for the base. It wasn't bad wine, I was using double-sized bottles of cabernet-merlot blend we bought at a warehouse club, which also happened to be highly rated for cheap wine in "Wine Enthusiast" magazine. It was good in the crockpot and not bad with dinner, too!

You can enjoy this as a meal in itself with protein, carbs and vegetables. Or, it can be a nice family meal served with salad and rolls. If you are solo, the leftovers are great heated in the microwave for lunch or dinner. You can also freeze portions of it to reheat in the microwave for future meals.

  • Ingredients for Crockpot Beef Stew Burgundy
  • 1 pound lean stew beef
  • 2 cups chopped potato or 1 large potato, chopped
  • 1 cup sliced onions
  • 1 cup sliced carrot
  • 1/4 cup mushrooms
  • 1 teaspoon crushed or chopped garlic
  • 1 cup red wine
  • 1/8 teaspoon Maggi seasoning
  • 1/4 cup flour
  • 1 teaspoon salt
  • Optional: 1 cup of shredded broccoli stems (broccoli slaw)

How to Make Crockpot Beef Stew Burgundy

1. Coat the stew beef chunks with flour and brown them in a non-stick pan or a pan with as little oil as you can get away with using.

2. Cut the potatoes into chunks. You can choose the size of chunks you prefer in your finished stew. They have all day to cook, so you don't have to make them smaller to reduce cooking time.

3. Slice the carrots and onions. Again, make them the size and shape you prefer in your finished stew.

4. Crush or chop the garlic cloves.

3. Starting with the beef, add all of the ingredients except for 2 tablespoons flour to a crockpot. The beef should be on the bottom.

4. Set your crockpot to cook for 6 or more hours. If you need it faster and your crockpot has high or low settings, you can cook for 4 hours on high or longer on low.

5. At the end of the cooking period, mix 2 tablespoons of flour with a little water and add it to the crockpot and stir.

6. Cook another 15 minutes as the stew thickens. If you want thicker stew, you can add even more flour and water.

7. Serve.
