Ingredients

Ingredient Variations and Substitutions

The black beans offer a pop of color to the white zucchini and peas, but if you prefer other varieties or have something else on hand, feel free to use that. Cannellini beans, for example, would also work well here, and most legumes are comparable in their nutrition facts.

Don't be fooled by the lemon zest in this recipe.

Although citrus fruit are known heartburn triggers, using the zest is a smart way to add citrusy flavor without causing reflux. You can also try orange zest instead of lemon.
