Low-Carb Main Dish Recipes: Fish and Seafood

You will notice a trend in this list: lots of salmon and shrimp.   This is because my fish-hating husband does like salmon (especially with my recipes), and, of course, because salmon is so good for us.  We both like shrimp, so that's another winner.  And as the main cook of the house, I love that fish and seafood cook so quickly!

Grilled Dilled Salmon - Easy and Elegant

This grilled salmon recipe takes only a very few minutes to put together, and is one of the salmon recipes we like to serve to guests, as everyone seems to love it.

This foolproof and extremely easy method for baking fish has quickly become one of my very favorite cooking techniques. The salmon (or other fish) comes out moist and flavorful every single time.

Here's another grilled salmon recipe.  On this one, the tangy glaze is sweet and spicy, and works very well with the rich taste of salmon. The glaze can also be used for baked salmon.

Seared Scallops - So Good and So Easy!

Not just a recipe: this is a complete guide to selecting, preparing, cooking, and serving scallops.  Did you know that scallops are not only delicious but good for our hearts and maybe our brains?  They also have plenty of vitamin B12, choline, and lots of minerals.

Low-Carb Shrimp and "Grits"

Laura Dolson

Can grits really be low-carb?  Yes!  Make them with almond meal, just as you would regular grits.  Now you can dress them up and make these South Carolina-inspired Shrimp and Grits with yummy ingredients like...bacon of course!

It's rare for low-carbers to eat anything breaded and fried, but we can make an exception in this case, as the breading has no regular starchy flour at all, but uses coconut flour instead.  Doesn't that make sense for Coconut Shrimp.  Also, try my Sugar-Free Sweet and Spicy Dipping Sauce - similar to the sugary ones in the restaurants, but better!

Zesty Grilled Shrimp

What cooks in three minute on a hot grill?  Shrimp!  I give you instructions so they won't be overcooked and rubbery, and this zesty marinade will liven them up.

Salmon Salad (instead of Tuna Salad)

Tired of tuna?  Salmon is even better for us anyway!  I like mine in lettuce wraps -- I'll just take a head of lettuce and start peeling off leaves and putting this salad inside.
