Low-Carb Pizza Bites Recipe

Yield 24 individual pizza bites

Get all the pizza flavor without the crust in these low-carb pizza bites. By lining the cups of mini muffin tins with pepperoni slices, you get a carb-free crust that holds a tomato and cheese filling. You can also make these pizza bites without pepperoni by spooning the filling ingredients directly into the muffin tins. Feel free to swap out the green pepper for small amounts of your other favorite pizza toppings: minced mushrooms, cooked onions, black olives, etc.


  • 8 oz cream cheese, at room temperature
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • ¼ cup sugar-free pizza sauce or spaghetti sauce
  • ½ cup shredded mozzarella cheese, or combination mozzarella and other cheese such as Parmesan
  • ¼ cup finely minced green pepper or other pizza topping
  • 24 slices of thin-sliced pepperoni, preferably in large thin slices


Heat oven to 350° F.

  1. Use a blunt butter knife to poke the pepperoni slices into the bottoms of mini-muffin cups. If you're not using pepperoni, make sure to thoroughly grease the pan. I find that butter works better than oil for this, but you could also use cooking spray, which can be applied evenly.
  2. In a large bowl, cream the cream cheese with a hand mixer until smooth and fluffy. (If you have an electric mixer, you can also use the paddle attachment.) Add eggs, garlic powder and oregano and beat until smooth and well-mixed. Scrape the mixture off the sides of the bowls and the beaters or paddle attachment.
  1. Stir in the pizza sauce, cheese and green pepper (or other pizza toppings) with a mixing spoon.
  2. Drop the filling by heaping teaspoonfuls into the muffin cups, making sure to evenly divide the mixture -- you should have 24 individual pizza bites.
  3. Bake for about 15-18 minutes, or until lightly browned on top and set in center (this means if you gently tap the center of one of the pizza bites, it should feel firm). Remove the muffin tin from oven, and let cool on a wire rack for 5 to 10 minutes. Run a knife around the edges of the pizza bites to loosen (I use a plastic knife for my nonstick pan). Hold the cooling rack over the top of the muffin tin and firmly hold the rack to the tin. Tip over, place the cooling rack on the counter and then gently lift the muffin tin away from the rack. Transfer the pizza bites to a serving plate.

Nutritional Information: Each piece with pepperoni has 1 gram effective carbohydrate, 3 grams protein, and 67 calories.

Without pepperoni, each has 1 gram effective carbohydrate, 2 grams protein, and 47 calories.
