Tuna Melt Stuffed Mushrooms

Here's a healthy way to get your fix. Try this cheesy tuna topped with more cheese.

Chop the stems from 12 medium baby bella mushrooms. Place mushroom caps on a baking sheet sprayed with nonstick spray, rounded sides down. Bake at 375 degrees until tender, 12 - 14 minutes. 

Meanwhile, bring a skillet sprayed with nonstick spray to medium heat. Cook and stir chopped stems, 1/4 cup diced onion, and 1/4 tsp. chopped garlic until slightly soft, about 3 minutes. Transfer to a medium bowl, and pat dry. Add a 2.6-oz. pouch of albacore tuna in water, a wedge of The Laughing Cow Light Creamy Swiss cheese, 1 tbsp. Dijonnaise, and 1 tbsp. sweet relish (patted dry). Stir until thoroughly mixed. 

Blot moisture from mushroom caps, and fill with tuna mixture. Bake until filling is hot, about 8 minutes. Top each mushroom with a quarter slice of 2% milk American cheese. (That's 3 whole slices in total.) Bake until melted, about 1 minute. (3 mushrooms: 94 calories, 3g fat)

2-Cheese Taquitos

The perfect addition to a Mexican fiesta. You’ll never need to grab a box from the freezer section again.

Place eight 6-inch yellow corn tortillas between 2 damp paper towels. Microwave for a minute, or until warm and pliable. Spread one tortilla with half a wedge of The Laughing Cow Light Creamy Swiss cheese; sprinkle with 1 tbsp. shredded fat-free cheddar cheese. Tightly roll up into a tube, and place on a baking sheet sprayed with nonstick spray, seam side down. (Secure with a toothpick if needed.) Repeat with remaining tortillas. Bake at 375 degrees until crispy, 14-16 minutes. (2 taquitos: 158 calories, 3g fat)

Italian Potato Skins

If you haven't tried these pizza-fied potato skins, you're in for a treat.

Pierce two 10-oz. baking potatoes several times with a fork. Microwave for 3 1/2 minutes. Flip potatoes, and microwave for another 3 1/2 minutes, or until soft. Halve lengthwise, and gently scoop out the pulp, leaving about 1/4 inch inside the skin.

Bake skins at 375 degrees until crispy, 12-15 minutes. Top with 1/3 cup low-fat marinara sauce and 1/4 tsp. garlic powder. Pull 2 sticks light string cheese into shreds, and roughly chop; sprinkle over skins. Bake until cheese has melted, about 5 minutes. (2 skins: 186 calories, 3.5g fat)

Cheese-Filled Mini Meatloaves

Portion-controlled meatloaf crammed with cheese? You got it. 

Bring a large skillet sprayed with nonstick spray to medium-high heat. Add 1 1/2 cups each finely chopped onion and mushrooms. Cook and stir until softened, 5-7 minutes. Transfer to a large bowl, and blot dry. Add 1 1/2 lbs. raw extra-lean ground beef (4 percent fat or less), 3/4 cup egg whites or fat-free liquid egg substitute, 3/4 cup quick-cooking oats, 1/2 cup ketchup, 2 tsp. chopped garlic, 1/2 tsp. salt, and 1/4 tsp. black pepper. Mix thoroughly. 

Distribute mixture into a 12-cup muffin pan sprayed with nonstick spray. Cut 3 light string cheese sticks into 4 pieces each. Press 1 piece into the center of each cup, and enclose it within the meat mixture. Bake at 350 degrees until firm and with browned edges, 20-25 minutes. (1 mini loaf: 137 calories, 3.5g fat)

Here's even more cheesed-up tuna. This makes a great snack; it's easy and delicious.

Combine a 2.6-oz. pouch of albacore white tuna in water and one wedge The Laughing Cow Light Creamy Swiss cheese; mix until uniform. Add 2 tbsp. diced red bell pepper and 1 tbsp. diced red onion. Top 3 medium lettuce leaves with one slice of tomato each. Evenly divide the tuna mixture among the leaves. (149 calories, 3.5g fat)
