Chicken Salad with Strawberry Vinaigrette Recipe

Yield 2 Strawberry-Chicken Salads

This is a quintessential summer dinner salad -- lovely, light, and different. Dress with strawberry vinaigrette dressing and you have a real treat on a hot summer night.

Ingredients

  • Strawberry Vinaigrette:
  • 1/2 cup washed, hulled and sliced strawberries
  • 1 teaspoon mustard
  • 2 tablespoons red-wine vinegar (balsamic is even better, but carb counts vary, so be careful)
  • Salt and pepper to taste
  • Sweetener to taste (depends on sweetness of strawberries; you might not need it)
  • 1/2 cup olive oil
  • Salad:
  • 8 cups torn lettuce, spinach, and/or arugula (fill a 2-quart mixing bowl)
  • 1/2 pound sliced boneless skinless chicken breast, that has been grilled or broiled
  • 2 cups washed, hulled and sliced strawberries
  • 1/4 cup sliced or slivered toasted almonds (toasted pine nuts or sunflower seeds are also good)
  • 2 ounces feta cheese, crumbled (Parmesan also works well)

Preparation

Make the Strawberry Vinaigrette

  1. Purée 1/2 cup washed, hulled and sliced strawberries in a blender or food processor. Add 2 tablespoons red-wine vinegar or balsamic vinegar, 1 teaspoon mustard, and salt, pepper and sweetener to taste.
     
  2. Blend, then add 1/2 cup olive oil. Blend until creamy. Taste and adjust seasonings.
     
  3. You will use 2 tablespoons dressing for each salad. Store the remaining dressing in a screw-top jar.

    Makes 8 (2-tablespoon) servings Strawberry Vinaigrette.

    Make the Salad

    1. Toss the 8 cups torn lettuce greens, spinach and/or arugula with about 1/4 cup (4 tablespoons) strawberry vinaigrette or other oil-and-vinegar type salad dressing.
       
    2. On a pretty platter, arrange the 1/2 pound grilled or broiled boneless skinless chicken breast, 2 cups washed, hulled and sliced strawberries, 1/4 cup sliced or slivered toasted almonds, pine nuts or sunflower seeds, and 2 ounces crumbled feta cheese or shaved Parmesan cheese.
       
    3. For individual salads, distribute the ingredients between two plates or bowls.
