Gluten-Free Strawberry Shortcake

Nothing says spring like strawberry shortcake. And we all know that strawberry shortcake is most often made with biscuits, but for people who are gluten-free, that isn't always an option. So how about replacing the biscuits with something gluten-free? This strawberry shortcake recipe features a basic gluten-free muffin recipe as the basis for this fresh-tasting dessert. It is sugar-free and gluten-free and delicious!


  • 1 large or several small cakes made with​ almond flour gluten-free muffin recipe
  • 1 teaspoon vanilla
  • 1 to 1 1/2 pounds fresh ​strawberries (3 to 4 cups)
  • 1 tablespoon agave syrup or sugar, optional
  • 1 to 1 1/2 cups heavy whipping cream
  • Vanilla or other sweetener to taste


  1. Mix up muffin recipe, adding 1 teaspoon of vanilla to the batter.
  2. Pour into prepared pans (see options below). Muffin pans just need to be greased, but placing parchment paper on the bottom of cake pans helps the cake come out easier.
  3. Bake according to directions for muffins. For a larger cake, it takes about 25 minutes until top is golden brown and springs back when pressed, or toothpick comes out clean.
  1. Slice up the strawberries and sweeten them if desired with agave syrup.
  2. Whip the cream and flavor with vanilla to taste.
  3. When cake or muffins are cool, split in half. Layer, putting most of the strawberries on first, then cover with whipped cream, add more strawberries and more whipped cream and then the rest of the strawberries.

Making the Muffin Recipe

You have a number of choices when making this shortcake. You can:

  1. Make one big one cake, using a 9-inch cake pan.
  2. Bake large muffins and split them in half.
  3. Bake six 4-inch cakes, either with mini-cake pans or special muffin pans such as "muffin top" pans. The ideal pan (but hard to find in the US) is a "Yorkshire pudding pan," which is similar to a muffin pan but deeper.
