This easy to make sugar-free frosting recipe is very flexible. If you want, you can add caramel, maple syrup, or a sugar-free flavoring for added taste. You'll have to experiment a bit if you use a flavoring, as each brand is a little different. I would start with half a teaspoon and go up bit by bit. If you are a vegan or sensitive to dairy, you can switch out cream cheese for a dairy-free alternative such as maple syrup, or a sugar-free flavoring for added taste. You'll have to experiment a bit if you use a flavoring, as each brand is a little different. This frosting goes very well with the low-carb spice cake and will cover a 8" or 9" round or square cake pan. It is also good as a spread. To make this recipe as a spread, don't add water. This spread also works well on my flax seed Bread, when the bread is made with extra sweetener and about a tablespoon of cinnamon.

Ingredients

  • 8-ounce package cream cheese
  • Stevia equivalent to about 2/3 cup of sugar (or to taste)
  • 3/4 teaspoon vanilla extract
  • 1/2 to 3/4 teaspoon caramel or other flavorings
  • 2 tablespoons water

Preparation

  1. Using a mixer, combine all ingredients and beat until smooth.
  2. If you are making a spread, don't add any water. I use about half the sweetener I would use for frosting when making a sugar-free cream cheese spread.
