Turkey day? More like turkey month! If you’ve got leftover turkey from your Thanksgiving feast, keep the good eatin’ going! I’m Hungry Girl Lisa Lillen and I’ve got 6 creative ways for you to use that leftover good-for-you protein!

Let’s Talk Turkey

Did you know that white-meat turkey is fantastic for weight loss and maintenance? Turkey is the perfect food to clean up your diet after an over-the-top meal.

 Just ditch the skin; it holds natural fat and soaks up the butter and other oils that are often used to baste the outside of the turkey. Once that's gone, you're looking at only 165 calories for a 4-ounce portion of roasted white meat. And, there are 34 grams of satisfying protein in that serving!

Added bonus: turkey can even help you handle stress. (It’s the holiday season... Who couldn't use some help there?) Of course, turkey can get boring if you don't change it up. So, as promised, here are six creative ways to take advantage of those leftovers!

Top Off Your Salads

You can make an endless variety of salads. For a Mexican spin, pair your turkey with black beans, salsa, and a dollop of light sour cream. To make an Asian-inspired salad, add water chestnuts, mandarin orange segments, and light sesame ginger dressing. For a spin on the Cobb, add hard-boiled egg whites, center-cut or turkey bacon, and some avocado.

If you’re on the go, let turkey be your protein of choice for your salad in a jar. (Never used a mason jar? Check this out.) Turkey is one way to up your salad game! Just be wary of fattening salad toppers and high-calorie dressings.

Give Tacos a Twist

I know what I'm doing the Tuesday after Thanksgiving… Taco Tuesday, Turkey Edition!

Finely chop your turkey, and toss it with some taco seasoning. Then pile it into corn tortillas or baked shells along with shredded lettuce, reduced-fat Mexican-blend cheese, and tomatoes. And if you’re looking for a low-carb swap, try sturdy lettuce cups in place of taco shells or tortillas! 

Upgrade Scoopable Chicken Salad

Why does chicken salad get all the love? You can just as easily make this lunchtime favorite with turkey! Mix light mayo, fat-free Greek yogurt, garlic powder, and onion powder with some shredded or cubed turkey for a delicious take on the classic. Some people add chopped celery, but I prefer cucumber! I’ve been known to toss some halved grapes in there as well.

Give Your A.M. Eggs a Makeover

For breakfast? Yes! Chop up that turkey, and add it to your egg scrambles, omelettes, and egg mugs! The extra boost of protein will give you energy to tackle the day ahead. It’s a delicious way to pump up your morning meal, and one of my favorite filling breakfast ideas.

Let's Casserole

Easy as can be, the one-pan meal is a terrific way to use up that turkey!

Toss it in a baking pan with veggies (maybe some cauliflower rice?) and sauce, and then sprinkle with reduced-fat cheese before baking. Wanna really take things up a notch? Use turkey in this twist on tetrazzini! My recipe calls for chicken, but you can easily swap it out for turkey.

Crunchy Cups of Turkey Goodness

Mini wonton wrappers are one of my favorite ingredients. Find them in the refrigerated section, near the tofu. Bake them in a muffin pan, and you get cute crunchy shells that can hold a lot of yumminess! Fill them with finely chopped turkey, diced or shredded veggies, and your favorite sauce or salad dressing. Here's one to try: turkey, broccoli cole slaw, and reduced-fat ranch! I'm getting hungry just thinking about 'em.
